Green Vegetable Recipes for Picky Eaters

Most children go through a stage of being difficult when it comes to green vegetables. Here are some ideas and recipes to get them into those little tummies:

1.

Use yellow bell peppers and stuff them with broccoli. Add some delicious cheese for extra flavor.

2.

Use your usual green kale, romaine and parsley smoothie and blend in some sweet fruit such as pineapple.

3.

Put green veggies into a roast vegetable dish that explores all the colors of the rainbow. Let your little one place the veggies in rows, concentric circles, or arrange them randomly. Drizzle olive oil over them, add salt and pepper and roast them until cooked.

4.

Chop broccoli up as finely as possible and add it to rice (at a ratio of 1:1). Once you have made your broccoli fried rice, your fussy eater will be hard-pressed to even realize they’re eating broccoli!

Try baking some kale muffins with added coconut. They’re eye-catching, tasty and healthy.

You can buy green juice (which contains kale and cucumber) and add some apple juice to sweeten it for your children.

Make a broccoli vegetable bake with added parmesan cheese and lemon for flavor.

One of my all time favourite side dishes my granny used to make with a roast dinner was Broccoli mornay ( all my cooking skills come from watching her endlessly in the kitchen and her food really is the best ) and this Broccoli bake I made tonight tasted so much like it I was so pleased and pleasantly surprised 😊 ingredients- Brown pasta, Broccoli, red and yellow peppers, garlic, tinned tomatoes, oregano, vegetable stock cube, vegan cheddar and vegan Parmesan. Recipe- 1. Pre heat the oven to 200. In one pan boil water, season and add the pasta and after 5 minutes add the broccoli to boil in with the pasta and drain the water out after 8 minutes in total. 2. Whilst the pasta is cooking chop up the peppers and fry off in a separate pan then add chopped garlic fry off then add the tinned tomatoes, oregano and add some water and veg stock cube. Bring it all to boil and then simmer until the pasta is cooked. 3. Place the pasta and broccoli in a baking dish and cover with the tomatoe sauce and then sprinkle your cheeses.
